Creamy Vegetable Dip Recipe

Ingredients
- 2 cups baby arugula
- 1 celery stalk, chopped into three pieces
- 1 small carrot, divided into thirds
- 4 scallions, trimmed and cut into thirds
- 1 small garlic clove
- 1 tablespoon chopped fresh herbs (tarragon, dill, basil, or parsley)
- 1 cup sour cream
- 1/2 cup mayonnaise
- 4 ounces cream cheese
- 2 cups vegetable chips, crushed finely
- Kosher salt and freshly ground black pepper
- Fresh vegetable sticks, for dipping
Directions
- Place the arugula, celery, carrot, scallions, garlic, and chosen fresh herb in a food processor and pulse until very finely chopped.
- Add the sour cream, mayonnaise, and cream cheese; process until smooth and fully combined.
- Stir in or pulse the crushed vegetable chips until the dip reaches a smooth, scoopable consistency; season with salt and pepper to taste.
- Transfer to a serving bowl and refrigerate at least 30 minutes (or up to 8 hours) to let flavors meld. Serve with fresh vegetable sticks.
