Ingredients

  • 4 ounces cream cheese
  • 1 tablespoon sour cream
  • 1 garlic clove, smashed
  • 1/2 teaspoon lemon zest (from half a lemon)
  • 1/4 teaspoon kosher salt
  • One 10-ounce package of frozen spinach, thawed and thoroughly drained
  • 1/2 cup marinated artichoke hearts, drained
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 12 slices of white bread

Instructions

  1. Preheat your oven to 450F and place one rimmed baking sheet inside to heat up.
  2. In a food processor, blend together the cream cheese, sour cream, garlic, lemon zest, kosher salt, spinach, and artichoke hearts until the mixture is evenly combined. Then add the mozzarella and Parmesan and pulse to mix evenly.
  3. Spread 1/4 cup of mayonnaise over half of the bread slices. Place these mayo-coated slices mayo-side down on the second rimmed baking sheet, then spread the spinach mixture evenly over them, reaching all the edges. Top with the remaining six bread slices. Spread the other 1/4 cup of mayonnaise on top of these slices.
  4. Carefully take the hot baking sheet out of the oven and place it on top of the sandwiches, creating a sandwich stack. Transfer the stacked pans into the oven and bake for about 15 minutes until the bread turns golden and the filling becomes melted and hot.
  5. Allow the panini bites to rest for 5 minutes before cutting them into bite-sized squares or triangles. Serve warm and enjoy!
