  • 1 rounded tablespoonful peanut butter
  • 2 teaspoons hot sauce
  • 2 teaspoons grill seasoning (recommended: Montreal Steak Seasoning) eyeball it
  • 4 chicken breast cutlets, 1/2 pound
  • 2 tablespoons honey
  • 2 tablespoons rice wine vinegar or cider vinegar
  • 1/4 seedless cucumber, peeled and cut into matchsticks

Cook Mode (Keep screen awake) NEW: You can now switch to Cook Mode to keep your screen awake.

  1. Heat the oven to 425 degrees F.
  2. Shape the pizza crust on a pizza pan or baking sheet. Spread duck or plum sauce over it just as you would traditional pizza sauce. Add a bit of crushed red pepper flakes, followed by the cheese and sliced peppers. Bake until it turns golden and bubbly, about 15 to 17 minutes.
  3. Heat a grill pan on medium-high. Mix together vegetable oil, soy sauce, peanut butter, hot sauce, and grill seasoning. If the peanut butter is stiff, warm it in the microwave for 10 seconds to make blending easier. Toss in the chicken to coat it well. Allow it to marinate for 10 minutes, then cook the cutlets 2 to 3 minutes per side until firm. Cut the chicken into thin slices.
  4. As the chicken grills, whisk honey with vinegar and toss in the cucumber slices to coat them thoroughly.
  5. Once the pizza is out of the oven, layer on the sliced chicken, chopped scallions, bean sprouts, and cilantro. Drain the cucumbers and distribute them across the top. Finish with chopped peanuts, slice into 8 pieces, and enjoy.

Fire up your oven and dive into this irresistible Thai Chicken Pizza that explodes with bold Asian flavors! Picture this: a crispy crust slathered in sweet-tangy duck sauce, spicy red pepper kick, gooey melted cheese, and vibrant bell peppers baking to golden perfection. While that's happening, whip up a nutty peanut-soy marinade for tender grilled chicken that steals the show. Top it all with crunchy cucumber matchsticks, fresh scallions, crisp bean sprouts, fragrant cilantro, and salty peanuts for the ultimate texture party. Ready in just 30 minutes with store-bought dough, it's your weeknight heroeasy, exotic, and packed with sweet-spicy-salty magic inspired by Rachael Ray's genius. Slice, savor, and watch it disappear!
