Spiked Strawberry Jalapeo Lemonade

This cocktail is slightly fruity, mildly sweet, pleasantly spicy, and extremely refreshing, with a lovely colorperfect for serving at any gathering.
- Ingredients:
- 2 ounces Strawberry Jalapeo Syrup (recipe below)
- 2 ounces blanco tequila
- 4 to 6 ounces sparkling bottled lemonade
- 1 thin lemon wheel, sliced, for garnish
Strawberry Jalapeo Syrup:
- 1 pound strawberries, hulled and halved
- 1 large jalapeo, thinly sliced
- 1 cup lemon juice
- 2/3 cup sugar
Special equipment: a hand blender
1. Fill a 12-ounce glass with ice cubes. Pour in the Strawberry Jalapeo Syrup and tequila. Stir gently, then top with sparkling lemonade. Garnish with a lemon wheel and enjoy.
Strawberry Jalapeo Syrup
Yield: 1 quart
1. Combine the strawberries, jalapeo slices, lemon juice, and sugar in a small saucepan. Heat over medium until it simmers, stirring occasionally to dissolve the sugar. Simmer 2 to 3 minutes, then remove from heat. Blend with a hand blender until smooth. Let cool about 30 minutes before using.
