Ingredients:
- 4 cups grape tomatoes
- 3 cloves garlic, peeled
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons coarse kosher salt
- 1 teaspoon ground black pepper
Instructions:
- Preheat the oven to 400F. In a medium bowl, combine the grape tomatoes and peeled garlic cloves; drizzle with olive oil, then add the salt and pepper and toss to coat.
- Spread the tomatoes and garlic in a single layer in a 9 x 13-inch glass baking dish. Roast for 20 minutes, stir gently, and if the pan looks dry, add 23 tablespoons of hot water. Return to the oven and roast another 2030 minutes.
- The tomatoes are done when they are slightly shriveled and the pan juices have reduced and thickened. Serve hot.
