Ingredients
- 2 1/2 ounces fresh pineapple juice
- 2 ounces light rum, such as Bacardi Light
- 1/4 ounce fresh lime juice, plus 1 lime wedge for garnish
- 1/4 ounce Demerara Sugar Simple Syrup (see recipe below)
- 2 sprigs of fresh rosemary
Demerara Sugar Simple Syrup
Yield: Approximately 3/4 cup
Ingredients
- 1/2 cup demerara sugar
- 1/2 cup water
Instructions
For the Pineapple Breeze
- In a mixing tin, combine pineapple juice, light rum, fresh lime juice, Demerara Sugar Simple Syrup, and one sprig of rosemary.
- Gently muddle the rosemary to release its aromatic flavor.
- Add ice and shake vigorously.
- Strain the drink into a glass filled with fresh ice.
- Garnish with the remaining rosemary sprig and a lime wedge.
For the Demerara Sugar Simple Syrup
- Place the demerara sugar and water in a saucepan over medium-high heat and bring to a boil.
- Reduce the heat to medium and simmer until the sugar dissolves completely.
- Remove from heat and allow to cool entirely before using.
