- 3 large eggs
- 3/4 cup sugar
- 1/4 cup kosher for Passover vegetable oil
- 3/4 cup matzo meal
- 2 tablespoons potato starch
- 6 to 8 cups peeled and sliced fruit, like apples, pears, and strawberries
- 1/8 cup cinnamon sugar
- Preheat the oven to 350F and lightly grease a 9 x 9-inch square baking dish.
- Whisk the eggs with the sugar until smooth, then stir in the oil, matzo meal, potato starch, and a pinch of salt until fully combined.
