  • 5 slices applewood smoked bacon, chopped into 1-by-1/4-inch pieces
  • 6 cups frozen or fresh lima beans
  • 4 cups frozen or fresh corn kernels
  • 2 cups chicken broth
  • 2 cups frozen cipollini onions
  • 3 cloves garlic, crushed and chopped
  • 3 cups finely shredded kale or collard greens
  • 4 tablespoons unsalted butter
  • Kosher salt and freshly ground black pepper

Whip up this irresistible Bacon Lima Bean Succotash! Crispy bacon, tender lima beans, sweet corn, and vibrant greens come together in one pot for a hearty, flavorful dish that's ready in just 35 minutes. Perfect for weeknights or holiday sidesyour family will devour every bite!

Instructions (Keep screen awake with Cook Mode):

  1. In a large Dutch oven or heavy pot over medium heat, cook the bacon, stirring now and then until crispy, about 5 minutes. Remove the bacon with a slotted spoon and place on a paper towel-lined plate. Leave the bacon fat in the pot and keep the heat at medium.
  2. Add lima beans, corn, chicken broth, cipollini onions, and garlic to the pot, then bring to a simmer. Cook until the vegetables are warmed through, approximately 15 minutes.
  3. Stir in the shredded kale and cook until it starts to soften and wilt, around 3 to 5 minutes.
  4. Add the butter, reserved bacon, and season with salt and pepper before serving.
