Ingredients
- Vegetable oil cooking spray, for greasing the pan
- 2 cups quick-cooking oats
- 6 tablespoons unsalted butter
- 1 pound mini marshmallows
- 3/4 teaspoon kosher salt
- 3/4 cup creamy unsweetened peanut butter
- 2 teaspoons vanilla extract
- 6 1/2 cups crispy rice cereal
- 1 1/4 cups candy-coated chocolates
- 1/2 cup milk chocolate chips
Instructions
- Grease an 8-inch square baking pan with cooking spray, then line it with parchment paper, allowing the paper to overhang about 1 inch on the sides. Set aside.
- In a large pot over medium heat, toast the oats while stirring continuously for a few minutes until they darken slightly and release a nutty aroma. Remove from heat and place oats on a plate to cool.
- Wipe the pot clean carefully, then return it to the stove on medium heat. Add the butter and let it melt completely and get hot enough to melt the marshmallows efficiently. Lower the heat, add the marshmallows and salt, and stir until the marshmallows have melted and the mixture is smooth. Take the pot off the heat.
- Stir in the peanut butter and vanilla extract. The peanut butter may remain somewhat swirled in the mixture. Add the crispy rice cereal and toasted oats and fold gently to combine everything evenly.
- Mix in the candy-coated chocolates and milk chocolate chips by folding just a couple of times to incorporate them quickly.
- Pour the mixture into the prepared pan and use a spatula to spread it out evenly. Place a piece of parchment paper on top and press the mixture down very firmly with your hands.
- Allow the treats to set and firm up at room temperature for about one hour before slicing and serving.
