  • 1 1/2 quarts water
  • 1 lemon
  • 1 small bunch fresh mint, leaves only

  1. Heat water in a saucepan until it reaches a boil. At the same time, peel the lemon, making sure to leave the bitter white pith behind and only removing the yellow outer peel.
  2. Place the lemon peel and mint leaves into the boiling water, give it a quick stir, and let it boil for 1 minute. Strain the tea into teacups and serve while hot, offering sugar on the side if desired.
