- 1 1/2 quarts water
- 1 lemon
- 1 small bunch fresh mint, leaves only

- Heat water in a saucepan until it reaches a boil. At the same time, peel the lemon, making sure to leave the bitter white pith behind and only removing the yellow outer peel.
- Place the lemon peel and mint leaves into the boiling water, give it a quick stir, and let it boil for 1 minute. Strain the tea into teacups and serve while hot, offering sugar on the side if desired.
