Ingredients

  • 16-ounce can chickpeas, drained
  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 1/4 cup half and half or evaporated low-fat milk
  • 1 teaspoon grated orange zest
  • Salt and freshly ground black pepper to taste

Instructions

  1. Process the drained chickpeas using a food mill or processor to create a silky, smooth puree.
  2. Melt the butter in a small pan over low heat. Add the minced garlic and let it gently warm until the kitchen fills with its irresistible aroma.
