Ingredients:
- 1 bag microwave popcorn, prepared as directed on package
- 2 red apples, pitted and chopped
- 1 1/2 cups white sugar
- 1/2 cup light brown sugar
- 1/2 cup light corn syrup
- 1 tablespoon unsalted butter, plus additional for coating
- 2 teaspoons baking soda
- Pinch of kosher salt

- Line a baking sheet with parchment paper.
- In a large bowl, gently toss the prepared popcorn with chopped apples.
- In a medium saucepan, combine white sugar, brown sugar, corn syrup, and 1/3 cup water. Bring to a boil, cooking until it reaches 240F. Remove from heat, stir in butter, then return to heat until 300F. Carefully take off heat and gently stir in baking soda and saltthe caramel will foam dramatically!
- Pour the hot caramel over the popcorn-apple mixture and fold together with a rubber spatula (careful, it's scorching hot!). Once slightly cooled, butter your hands lightly and shape into tennis ball-sized popcorn balls. Insert a lollipop stick into each center and chill on the prepared baking sheet for about 1 hour until firm.
