Ingredients
- 1 cup pepitas
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon ground nutmeg
- 2 tablespoons light brown sugar
- 2 teaspoons maple syrup
Instructions
- Prepare a baking sheet by lining it with parchment paper and set it aside.
- Toast the pepitas in a large skillet over medium-low heat, stirring regularly, until they turn golden and emit a fragrant aroma, about 6 to 8 minutes.
- While the pepitas toast, mix together cinnamon, allspice, ginger, salt, pepper, and nutmeg in a small bowl and set this spice blend aside.
- Take the pepitas off the heat and remove from the skillet. Return the skillet to the stove and add the brown sugar, maple syrup, and 1 teaspoon of water. Stir constantly as you cook until the sugar is fully dissolved and the mixture is combined, about 1 to 2 minutes. Then incorporate the spice blend and switch off the heat.
- Quickly add the toasted pepitas back into the skillet and toss thoroughly to coat them evenly with the spiced syrup. Transfer the coated pepitas onto the prepared baking sheet and spread them out to cool completely.
- Once cooled, break the pepitas apart slightly and store them in an airtight container at room temperature. They will keep well for up to two weeks.
