Transform melted vanilla ice cream into this irresistibly creamy chocolate moussea decadent treat that's surprisingly simple to make at home. Perfect for impressing guests with its rich, velvety texture and intense cocoa flavor!

Ingredients:

  • 1 cup melted vanilla ice cream
  • 1 tablespoon sifted cocoa powder
  • 6 ounces chopped 70% bittersweet chocolate, plus 2 tablespoons shaved for garnish
  • 3 large pasteurized egg whites
  • Pinch of kosher salt
  • 1/2 cup heavy cream

  1. In a saucepan, whisk together the melted ice cream and cocoa powder until smooth and lump-free. Warm over medium heat until it just begins to simmer. Place chopped chocolate in a medium bowl and pour the hot ice cream mixture on top. Stir until the chocolate is fully melted and the mixture is smooth, then allow it to cool until just warm.
  2. Whisk the egg whites with a pinch of salt until stiff peaks form. Fold one-third of the beaten egg whites into the chocolate mixture to lighten it, then gently fold in the remaining egg whites until just combined for that airy lightness.
  3. Beat the heavy cream until medium-stiff peaks hold, then fold it into the chocolate mixture for extra silkiness. Spoon the mousse evenly into 4 serving dishes and chill for about 1 hour and 30 minutes until perfectly set. Top with shaved chocolate and watch it disappear!
