This effortless dessert highlights extra-ripe peaches. Freezing whole peaches and then grating them produces a refreshing, granita-like texture packed with pure fruit flavor. Layer the shaved frozen peaches over crunchy shortbread and finish with a honeyvanilla whipped cream, lime zest, and mint for a perfect balance of creamy, sweet, and bright flavors.
Ingredients
- 3 well-ripened peaches
- 2 cups heavy whipping cream
- 3 tablespoons powdered sugar
- 2 tablespoons honey
- 1 teaspoon real vanilla extract
- Finely grated zest from 2 limes
- A few mint leaves, for serving
- 8 shortbread cookies (your preferred variety)
Directions
- Arrange the whole peaches (do not pit or peel) on a tray and freeze until firmat least 5 hours, preferably overnight.
- When ready to serve, whip the heavy cream with the powdered sugar, honey, and vanilla until soft to medium peaks form.
- Place one shortbread cookie in the bottom of each of four coupe glasses.
- Shred the frozen peaches with a box grater and mound the shavings over the cookie layer (the texture should resemble shaved ice or granita).
- Spoon some whipped cream over the peaches, then sprinkle with lime zest and top with mint leaves.
- Crumble the remaining shortbread cookies over each serving and serve immediately.
