Ingredients:
- 1 tube of precooked polenta (approximately 1 pound)
- 2 cups all-purpose flour
- 5 tablespoons canola oil
- Kosher salt and freshly ground black pepper
- Sesame-Ginger Yogurt Dip (recipe below)
Sesame-Ginger Yogurt Dip Ingredients:
- 1 cup Greek yogurt
- 1 tablespoon za'atar
- 1 teaspoon freshly grated ginger
- Zest and juice of 1 lime
- 1/4 teaspoon sesame oil
- Kosher salt and freshly ground black pepper
Instructions:
- Trim the edges of the polenta tube so the sides are even. Slice into about 45 sticks, each roughly 2 inches long, 1/4 inch wide, and 1/4 inch thick. Place the flour in a shallow dish and lightly coat each stick, shaking off excess.
- Heat the canola oil in a large nonstick skillet over medium heat and prepare a paper towellined baking sheet for draining.
- Fry the polenta sticks in batches, cooking 3 to 4 minutes per side until golden brown. Transfer to the baking sheet to drain and season immediately with salt and pepper while hot.
- Serve the fries with the Sesame-Ginger Yogurt Dip.
To prepare the Sesame-Ginger Yogurt Dip:
- In a small bowl, stir together the Greek yogurt, za'atar, grated ginger, lime zest, and lime juice.
- Whisk in the sesame oil and season with salt and pepper to taste.
