### Malanga Fritters:- 8 cups fresh malanga, peeled and cubed- 1 Scotch bonnet pepper- 1/4 cup finely minced parsley- 1 tablespoon salt- 1/2 cup vegetable oil, plus additional oil for deep frying- 7 to 8 tablespoons Aromatic Seasoning Mix, recipe follows- 1 teaspoon freshly ground black pepper### Aromatic Seasoning Mix:- 1 cup minced onion- 1-ounce vinegar- 1 1/2 ounces olive oil- 1/2 red bell pepper, minced- 2 scallions, minced- 5 large garlic cloves, minced- 1 tablespoon yellow mustard- 2 tablespoons bouillon seasoning- 1/2 tablespoon freshly ground black pepper- 2 to 3 Scotch bonnet peppers, minced- 1/3 cup coarsely minced parsley

Process the malanga in a food processor, pulsing until it reaches a paste-like texture, then transfer into a large bowl. With a mortar and pestle, crush the pepper, parsley and salt together. Warm the 1/2 cup of vegetable oil in a medium skillet on low heat, then add the Aromatic Seasoning Mix and cook gently for about 1 minute. Combine this mixture with the malanga paste in the bowl. Mix in the black pepper, cover with plastic wrap and allow to rest for approximately 1 hour. You may store the batter in the refrigerator for up to 24 hours if preferred.2. Heat oil in a sturdy skillet over medium-high temperature. When the oil reaches the right temperature, carefully drop spoonfuls of the batter into the hot oil, being mindful not to overcrowd the pan. Deep fry the fritters until they achieve a beautiful golden hue, approximately 3 to 4 minutes per side. Transfer the cooked fritters onto absorbent paper towels to remove excess oil. Move to a serving dish and serve while still warm.### Aromatic Seasoning Mix:1. Combine the initial 10 ingredients in either a blender or food processor and process until the mixture becomes smooth and well combined. Fold in the parsley and mix thoroughly to incorporate.
