This cocktail is about blending several bold flavors to complement each other rather than overshadowingrich butter, dark rum, and warming spices. I created this because I adore the taste of a buttered rum Lifesaver candy; it brings back fond memories! The butter lends a smooth texture and highlights the spices and the subtly floral notes of the rum. While you can opt for a high-end rum, dark rum is the most nostalgic choice here. The result is indulgently rich but balanced, perfect for warming you up on a cold evening. Though, I've also enjoyed it even during warm weather...

Spiced Butter:
- 4 tablespoons (2 ounces) unsalted butter, softened
- 3/4 cup dark brown sugar
- 1 tablespoon blackstrap molasses
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
For the Drinks:
- 1 teaspoon vanilla extract
- 10 ounces dark rum
- Unsweetened whipped cream, for garnish
Instructions:
- To prepare the spiced butter: In a medium bowl, vigorously whisk together the butter, brown sugar, molasses, cinnamon, ginger, vanilla, salt, allspice, and cloves until you have a smooth mixture. Leave at room temperature.
- For the drinks: Heat the vanilla and 1/2 cup of water over medium heat in a saucepan until it reaches a boil. Reduce the heat to low and stir in the rum to warm through. Blend in the spiced butter.
- Pour into six small mugs or four larger heatproof glasses. Generously top with whipped cream.
A Creative Topping Idea:
If using vanilla beans, scrape out the seeds to use in custards or ice creams. Place the leftover vanilla pod flat on a parchment-lined baking sheet. Dry it in a 180F oven for about 90 minutes to two hours until brittle. Let rest for 30 minutes, then grind it into a powder with a blender. Sprinkle this fragrant vanilla powder atop the whipped cream for an aromatic finishing touch on this or other desserts and drinks.
