Horseradish Burgers With Havarti

Ingredients:
- 2 pounds ground chuck
- 1/4 cup grated fresh or prepared horseradish
- 1/2 bunch fresh chives, finely chopped
- Sea salt and freshly ground black pepper
- Canola oil
- 16 slices havarti cheese
- 8 large hamburger buns, split
- Ketchup, mayonnaise, and mustard, for serving
- Cooked bacon, lettuce, sliced tomato, and onion, for serving
Instructions:
- Place the ground beef in a large mixing bowl. Gently fold in the horseradish and chives using a rubber spatula; season with salt and pepper. Shape the mixture into 8 patties by hand, cover them, and refrigerate while you prepare your grill.
- Set a large grill pan over two burners on medium-high heat, or preheat a gas or charcoal grill until it's very hot. Burgers tend to stick to a cold grill, so allow enough time for it to heat up. Fold a few paper towels into a thick square, lightly coat with oil, and quickly wipe the hot grill grates to create a non-stick surface. Grill the burgers for about 8 minutes per side for medium doneness, or 7 minutes per side if you prefer them rare.
- As the burgers near the end of cooking, place a couple of havarti cheese slices on each patty. Cover the grill for about 1 minute to let the cheese melt. Transfer the burgers to a clean plate to free up space for toasting the buns.
- Wipe the grill rack again with the oiled paper towel to remove any charred bits, then place the buns cut-side down on the grill and toast for 1 minute. Serve the burgers with your preferred condiments and toppings, such as bacon, lettuce, tomato, and onion.
