Honey Whole-Wheat Pretzel Sticks

- Preheat your oven to 425F (220C).
- In a stand mixer fitted with the paddle attachment, blend the instant yeast, honey, and warm water. Let rest for 5 to 6 minutes until foamy. In a separate bowl, whisk together the whole-wheat flour, all-purpose flour, and 2 teaspoons of kosher salt.
- Add the flour mixture and canola oil to the yeast blend. Mix on low speed until combined, then switch to the dough hook and knead on low to medium speed for 2 to 3 minutes until smooth and pliable. Add extra all-purpose flour one tablespoon at a time if the dough is too sticky.
- Roll the dough into a long log and divide into 16 equal pieces. Roll each piece into a thin tube approximately 10 inches long and 1 inch thick. Spray two baking sheets with cooking spray, then twist each dough stick and arrange them with 1 to 1.5 inches between each.
- Beat the egg with 1 teaspoon of water and brush over each dough stick. Mix 1 tablespoon of kosher salt with sesame seeds and sprinkle over the pretzels.
- Bake for 18 to 20 minutes until the crust turns golden and the interior remains soft. Cool completely before serving.
