Ingredients

  • 2 cups ginger slices, peeled (1/8 inch thick)
  • 2 cups sugar
  • 2 cups water
  • 1 quart soda water
  • 1 lime, cut in wedges
  • 4 mint sprigs

Instructions

  1. Combine ginger, sugar, and water in a saucepan and bring to a gentle simmer. Let the mixture reduce by half until it reaches a syrupy texture. Remember, the syrup will become thicker as it cools. Strain the warm syrup and let it cool completely.
  2. While the syrup is cooling, prepare the ginger candy. Remove the ginger slices from the syrup and coat them thoroughly with sugar. Place them on a baking sheet and dry slowly in a 225-degree oven for about 3 hours. The ginger should be dried but remain chewy.
  3. In a tall glass filled with ice, add a mint sprig and mix 1 part ginger syrup with 7 parts soda water. Squeeze in a lime wedge and add to the drink. Adjust the amount of syrup to taste. Stir and serve. For a fun twist, use chilled soda water and add a scoop of vanilla ice cream to make a Ginger Ale Float.
