Ingredients
- 2 cups ginger slices, peeled (1/8 inch thick)
- 2 cups sugar
- 2 cups water
- 1 quart soda water
- 1 lime, cut in wedges
- 4 mint sprigs

Instructions
- Combine ginger, sugar, and water in a saucepan and bring to a gentle simmer. Let the mixture reduce by half until it reaches a syrupy texture. Remember, the syrup will become thicker as it cools. Strain the warm syrup and let it cool completely.
- While the syrup is cooling, prepare the ginger candy. Remove the ginger slices from the syrup and coat them thoroughly with sugar. Place them on a baking sheet and dry slowly in a 225-degree oven for about 3 hours. The ginger should be dried but remain chewy.
- In a tall glass filled with ice, add a mint sprig and mix 1 part ginger syrup with 7 parts soda water. Squeeze in a lime wedge and add to the drink. Adjust the amount of syrup to taste. Stir and serve. For a fun twist, use chilled soda water and add a scoop of vanilla ice cream to make a Ginger Ale Float.
