Hibiscus Gin-and-Tonic Recipe

Ingredients
- 1/2 cup dried hibiscus blossoms
- 1/2 cup granulated sugar
- 3/4 cup gin
- 1/4 cup fresh lemon juice (from about 12 lemons)
- 1 1/2 cups tonic water
Directions
- Combine the dried hibiscus flowers, sugar, and 1/2 cup water in a small saucepan. Bring to a boil, then reduce to a simmer and stir until the sugar dissolves, about 2 minutes. Transfer the mixture to a small bowl and chill in the refrigerator until thoroughly cold, at least 1 hour or overnight.
- Strain the chilled hibiscus syrup into a liquid measuring cup, reserving some petals for garnish. In a small pitcher, combine the gin, lemon juice, and 1/4 cup hibiscus syrup, then add the tonic water. Taste and add more hibiscus syrup if you prefer a sweeter cocktail.
- Fill four glasses with ice and divide the cocktail among them. Garnish each glass with reserved hibiscus flowers.
