Ingredients

  • 1 pineapple (3 to 4 pounds)
  • Nonstick cooking spray
  • 2 teaspoons butter
  • 1/4 cup brown sugar
  • 1/4 cup rum
  • 1 pint light vanilla ice cream

Instructions

  1. Trim the top and bottom off the pineapple; peel it and slice crosswise into 8 rings, each about 1/2 inch thick. Using a spoon or an apple corer, remove the core from each ring.
  2. Coat a large grill pan with cooking spray and warm over medium heat. Grill the pineapple rings in 2 or 3 batches, cooking each side for 2 to 3 minutes until they are golden brown with visible grill marks. (Alternatively, you can use an outdoor grill lightly sprayed with cooking spray.)
  3. As the final batch cooks, melt the butter, brown sugar, and rum together in a small saucepan on low heat. Stir continuously until the sugar dissolves and the sauce slightly thickens, about 2 minutes. Remove from heat afterward.
  4. Place a grilled pineapple ring on each serving plate, add a 1/4 cup scoop of vanilla ice cream in the middle, and spoon approximately 2 teaspoons of the rum sauce over the ice cream.
