Ingredients
- 1 pineapple (3 to 4 pounds)
- Nonstick cooking spray
- 2 teaspoons butter
- 1/4 cup brown sugar
- 1/4 cup rum
- 1 pint light vanilla ice cream
Instructions
- Trim the top and bottom off the pineapple; peel it and slice crosswise into 8 rings, each about 1/2 inch thick. Using a spoon or an apple corer, remove the core from each ring.
- Coat a large grill pan with cooking spray and warm over medium heat. Grill the pineapple rings in 2 or 3 batches, cooking each side for 2 to 3 minutes until they are golden brown with visible grill marks. (Alternatively, you can use an outdoor grill lightly sprayed with cooking spray.)
- As the final batch cooks, melt the butter, brown sugar, and rum together in a small saucepan on low heat. Stir continuously until the sugar dissolves and the sauce slightly thickens, about 2 minutes. Remove from heat afterward.
- Place a grilled pineapple ring on each serving plate, add a 1/4 cup scoop of vanilla ice cream in the middle, and spoon approximately 2 teaspoons of the rum sauce over the ice cream.
