Top Secret Chocolate Cookies

Ingredients
- 2 1/2 sticks unsalted butter, softened to room temperature
- 2 cups granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3/4 cup Dutch process cocoa powder
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- White sanding sugar for decoration
Instructions
- In a large mixing bowl, combine the butter and sugar using a hand mixer until creamy. Add the eggs and vanilla extract, blending until smooth.
- In another bowl, whisk together the cocoa powder, flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until fully combined.
- Shape the dough into two logs roughly 2 inches tall and 12 inches long. Wrap each log with wax paper and refrigerate for 2 hours.
- Preheat the oven to 350F (175C).
- After chilling, slice the dough into rounds about 1/2 inch thick. Dip each slice in sanding sugar, then place on a cookie sheet lined with parchment paper.
- Bake for about 10 minutes. Once done, transfer the cookies to a wire rack to cool completely.
