Ingredients

  • 2 1/2 sticks unsalted butter, softened to room temperature
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3/4 cup Dutch process cocoa powder
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • White sanding sugar for decoration

Instructions

  1. In a large mixing bowl, combine the butter and sugar using a hand mixer until creamy. Add the eggs and vanilla extract, blending until smooth.
  2. In another bowl, whisk together the cocoa powder, flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until fully combined.
  3. Shape the dough into two logs roughly 2 inches tall and 12 inches long. Wrap each log with wax paper and refrigerate for 2 hours.
  4. Preheat the oven to 350F (175C).
  5. After chilling, slice the dough into rounds about 1/2 inch thick. Dip each slice in sanding sugar, then place on a cookie sheet lined with parchment paper.
  6. Bake for about 10 minutes. Once done, transfer the cookies to a wire rack to cool completely.
