  • 3 pounds ground chuck
  • 1 (2-ounce) bottle Cajun hot sauce, adjust to taste
  • 2 cups hickory wood chips, soaked for 30 minutes
  • 4 muffaletta buns, or other very large rolls, sliced open
  • 1 pound maple bacon, cooked until crispy
  • Gorgonzola Cheese Sauce, recipe below
  • Barbecue Sauce, recipe below

Gorgonzola Cheese Sauce:

  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup chicken stock
  • 1/4 cup white wine
  • 1 cup crumbled Gorgonzola cheese

Barbecue Sauce:

  • 1 cup apple cider vinegar
  • 1 cup ketchup
  • 2 tablespoons light brown sugar
  • 1 tablespoon hot sauce
  • 1 tablespoon yellow mustard
  • 1 tablespoon molasses
  • 1 teaspoon salt
  • 1 teaspoon crushed red pepper flakes

Instructions:

  1. Fire up the grill and mix 3 pounds ground chuck with Cajun hot sauce in a large bowl until fully combined. Form into 4 epic burger patties, cover, and chill for 1 hour to let flavors meld.
  2. Heat your charcoal grill to medium-high. When coals are white-hot, scatter soaked hickory chips over them for that irresistible smoky aroma. Grill burgers, flipping once, to your perfect doneness.
  3. Toast those muffaletta buns on the grill while burgers cook. Stack each patty high with crispy maple bacon and a luscious drizzle of Gorgonzola Cheese Sauce. Skewer, quarter, and serve with Barbecue Sauce on the side for dipping glory!

Gorgonzola Cheese Sauce Preparation:

  1. Melt 2 tablespoons butter in a saucepan over medium-low heat. Whisk in 2 tablespoons flour to make a smooth roux, cooking until the raw flour smell vanishes, about 2 minutes.
  2. Pour in 1 cup heavy cream, 1/2 cup chicken stock, and 1/4 cup white wine. Whisk constantly as it simmers and thickens, about 5 minutes. Stir in 1 cup crumbled Gorgonzola until melted and velvetyserve hot!

Barbecue Sauce Preparation: (Yields approximately 2 1/2 cups)

  1. Whisk all ingredients together in a medium saucepan until smooth.
  2. Simmer gently over low heat for 5-10 minutes until thickened to perfection. Get ready for bold, tangy flavor that elevates every bite!
