For the crust:
- 1 1/2 cups graham cracker crumbs (about 10 crackers)
- 1/4 cup sugar
- 6 tablespoons (3/4 stick) unsalted butter, melted
For the filling:
- 6 extra-large egg yolks, at room temperature
- 1/4 cup sugar
- 1 (14-ounce) can sweetened condensed milk
- 2 tablespoons finely grated lime zest
- 3/4 cup freshly squeezed lime juice (4 to 5 limes)
For the decoration:
- 1 cup (1/2 pint) cold heavy cream
- 1/4 cup sugar
- 1/4 teaspoon pure vanilla extract
- Thin slices of lime for garnish
Instructions
- Preheat your oven to 350 degrees F.
- Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch pie pan. Bake 10 minutes until golden, then cool completely.
- Prepare the filling: Beat egg yolks and sugar on high with a paddle attachment until thick (about 5 minutes). Mix in condensed milk, lime zest, and juice on medium. Pour into cooled crust and freeze.
- Craft the topping: Whip cream to soft peaks, add sugar and vanilla, then beat to firm peaks. Dollop or pipe onto frozen pie, garnish with lime slices. Freeze several hours or overnight for sliceable perfection!
