Ingredients:

  • 3 large egg whites, brought to room temperature
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon cream of tartar
  • 3/4 cup granulated sugar

Instructions:

  1. Preheat your oven to 200F and line 2 baking sheets with parchment paper. Get ready for cookie magic!
  2. In a stand mixer fitted with the whisk attachment, beat the room-temperature egg whites, vanilla extract, and cream of tartar until frothy and soft peaks form. Gradually add the sugar, 1 tablespoon at a time, pausing 15 seconds between additions. Once all sugar is in, beat for 5 more minutes until glossy, stiff peaks form no dry look here!
  3. Transfer to a large pastry bag with a star tip. Pipe 2-inch cookies onto the sheets, spacing 1 inch apart. Watch them take beautiful shape!
  4. Bake for 45 minutes, then turn off the oven and let them rest inside for 30 more minutes. Cool completely before storing in an airtight container. Enjoy these light, sweet clouds!
