Ingredients

  • 4 tablespoons vegetable oil
  • 6 garlic chives, finely chopped
  • 12 medium-sized green ling prawns, unpeeled
  • Vermicelli noodles, cooked according to package instructions (see Cook's Note)
  • 2 tablespoons crushed roasted peanuts
  • 1 green mango, peeled, pitted, and sliced
  • 1 green banana, halved and thinly sliced lengthwise
  • 1 Lebanese cucumber, halved and thinly sliced lengthwise
  • 6 lettuce leaves, torn in half
  • 1 teaspoon fish sauce
  • Nuoc mam cham dipping fish sauce

Special equipment: 12 bamboo skewers, soaked in water for 20 minutes

Instructions

  1. Preheat a grill to medium heat.
  2. In a small saucepan, heat the vegetable oil with the finely sliced garlic chives until just simmering. Stir gently, then remove from heat and pour the garlic chive oil into a bowl.
  3. Thread each prawn onto a skewer by passing the skewer through the tail and then through the top of the head. Grill over medium heat for about 2 minutes on each side until cooked through.
  4. While the prawns cook, warm the vermicelli noodles on a plate in the microwave for 1 minute at high power. Toss the noodles with the garlic chive oil and sprinkle crushed peanuts over them. Tear off a piece of the noodles and use it to wrap a grilled prawn (remove the skewer first). Place the wrapped prawn on a lettuce leaf, then add slices of mango, banana, and cucumber before rolling it up.
  5. Repeat for all prawns and serve the wraps with nuoc mam cham dipping sauce.
