Ingredients:

  • 1/4 cup Greek yogurt (e.g., Icelandic Skyr)
  • 2 teaspoons anchovy paste (tube preferred)
  • 1 large fresh garlic clove, minced
  • Juice from 1/2 lemon
  • Kosher salt and freshly ground black pepper to taste
  • 4 tablespoons extra-virgin olive oil
  • 1/3 cup grated Parmesan cheese, plus extra for garnish
  • Two 4-ounce packs of Little Gem lettuce, washed and dried
  • 2 tablespoons homemade toasted breadcrumbs

Instructions:
