- 8 ounces cream cheese
- 8 tablespoons compound butter, such as Chile Herb Cowboy Butter (recipe below)
Chile Herb Cowboy Butter:
- 2 tablespoons olive oil
- 6 cloves garlic
- 2 tablespoons fresh sage, chopped
- 1 tablespoon fresh thyme, chopped
- 2 teaspoons crushed red chile flakes
- Pinch of kosher salt
- Pinch of freshly ground black pepper
- 2 sticks salted butter, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 tablespoons fresh chives, chopped
Instructions
- Quarter the potatoes and boil in a large pot with salted water until fork-tender, about 15 minutes. Pro tip: Keeping skins on adds that perfect rustic bite!
- Meanwhile, simmer cream with rosemary sprigs, seasoned with salt and pepper, until slightly reduced, about 10 minutes. Your kitchen will smell divine.
- Drain potatoes, return to pot over low heat, and mash to evaporate steam. Stir in rosemary cream and cream cheese for ultra-creamy bliss.
- Transfer to a 9-by-13-inch baking dish, top with spoonfuls of Chile Herb Cowboy Butter, and broil 1-2 minutes until golden. Serve hot and watch it disappear!
Chile Herb Cowboy Butter Preparation:
- In a skillet over medium-low, heat olive oil and saut garlic, sage, thyme, and chile flakes with salt and pepper until garlic softens, about 5 minutes. Cool 5 minutes.
- Mix in softened butter, garlic powder, onion powder, herb-infused oil, and chives until well combined. Flavor explosion incoming!
- Spoon onto plastic wrap, roll into a log, twist ends, and chill 2 hours (or freeze 1 hour). Slice and melt over steaks, chicken, potatoes, or bread for anytime indulgence.
