Ingredients
- 2 medium russet potatoes
- 3 tablespoons olive oil
- Kosher salt and freshly ground black pepper, to taste
- 1 small onion, diced
- 1 red bell pepper, chopped
- 1 clove garlic, minced
- 8 ounces ground beef (90% lean)
- 1/2 teaspoon chili powder
- 1 1/2 cups shredded sharp Cheddar cheese
Instructions
- Peel the potatoes and cut into small cubes (less than 1/2 inch). Soak in cold water to remove starch, drain, rinse, pat dry on paper towels.
- Heat olive oil in a 10-inch cast iron skillet over medium-high. Add potatoes; cook, stirring occasionally, until tender and golden, about 15 minutes. Season with 1/4 teaspoon salt and pepper. Remove with slotted spoon; set aside.
- Preheat broiler to high.
- In same skillet, cook onion, bell pepper, and garlic until browned, about 7 minutes. Add beef, chili powder, and 1/2 teaspoon salt. Break up meat; cook until browned, about 5 minutes. Stir in potatoes. Top evenly with cheese.
- Broil until cheese melts and bubbles, about 1 minute. Serve hot and dig in!
