Ingredients
- 1 tablespoon olive oil
- 1 1/2 pounds Italian turkey sausages (hot, mild, or mixed; about 6 sausages)
- 1 1/2 tablespoons unsalted butter
- 1/4 teaspoon caraway seeds
- 1 large fennel bulb, trimmed, quartered, and thinly sliced; plus 1 tablespoon of fronds for garnish
- 1 Gala apple, cored and thinly sliced
- 1 pound sauerkraut, well-drained
- Kosher salt and freshly ground black pepper
Preparation
Warm the olive oil in a large nonstick skillet over medium-high heat. Add the sausages and brown them by turning occasionally, about 6 to 8 minutes. Pour in a small amount of water, cover, and continue cooking until they are just cooked through, roughly 2 more minutes. Remove sausages to a plate to cool. Once cooled, cut into 2-inch slices and set aside.
Lower the heat to medium and add the butter and caraway seeds to the skillet, stirring until the butter melts. Stir in the fennel and apple, cooking until they soften slightly, about 3 minutes. Incorporate the sauerkraut and sliced sausage, stir, and cook until the sauerkraut is thoroughly heated, approximately 3 more minutes. Season with salt and pepper to taste. Garnish with the reserved fennel fronds before serving.
