Ingredients
- 4 slices bacon, chopped
- 2 garlic cloves, thinly sliced
- 2 tablespoons fresh thyme leaves
- Small pinch of crushed red pepper flakes
- 2 pounds fresh spinach
- Kosher salt and freshly cracked black pepper, to taste
- 2 tablespoons balsamic vinegar
Instructions
- In a large skillet over medium-high heat, cook the chopped bacon until crisp, about 5 minutes.
- Add the sliced garlic, thyme, and red pepper flakes and saut until fragrant, about 30 seconds.
- Add the spinach, season with a pinch of salt and freshly cracked black pepper, and toss frequently until wilted, about 2 minutes.
- Stir in the balsamic vinegar, combine well, and serve warm (or let cool to room temperature before serving).
