Ingredients

  • 4 slices bacon, chopped
  • 2 garlic cloves, thinly sliced
  • 2 tablespoons fresh thyme leaves
  • Small pinch of crushed red pepper flakes
  • 2 pounds fresh spinach
  • Kosher salt and freshly cracked black pepper, to taste
  • 2 tablespoons balsamic vinegar

Instructions

  1. In a large skillet over medium-high heat, cook the chopped bacon until crisp, about 5 minutes.
  2. Add the sliced garlic, thyme, and red pepper flakes and saut until fragrant, about 30 seconds.
  3. Add the spinach, season with a pinch of salt and freshly cracked black pepper, and toss frequently until wilted, about 2 minutes.
  4. Stir in the balsamic vinegar, combine well, and serve warm (or let cool to room temperature before serving).
