Directions
- For the crust: Position a rack in the center of the oven and preheat to 325 degrees F. Combine the cookie crumbs, butter, sugar and salt in a medium bowl. Press into the bottom and sides of a 9-inch deep-dish pie pan. Bake until dry and set, 15 to 18 minutes. Allow to cool completely on a wire rack.
- For the filling: Mix the cornstarch and 1 1/4 cups of the sugar in a medium saucepan and very gradually whisk in the wine to avoid lumps. Cook over medium heat, stirring frequently, until it reaches a simmer and becomes very thick, approximately 8 minutes. Take off the heat and add the chocolate, butter and salt, stirring until smooth. Transfer the filling into the cooled crust and place in the refrigerator until chilled and set, roughly 4 hours and up to overnight.
- Just before serving, beat the cream with the remaining 3 tablespoons sugar in a large bowl with an electric mixer until gentle peaks form. Garnish the pie with the whipped cream. Sprinkle the chocolate curls or sprinkles across the top, if preferred.
