Indulge in the ultimate comfort food with this fiery twist on classic pimento cheese! Bursting with sharp Cheddar, tangy pickled jalapeos, and a kick of Sriracha, it's inspired by the irresistible version from my favorite Brooklyn spot, Stinky. Quick to whip up in just 10 minutes, this creamy, spicy spread will have you craving moreperfect for game days, parties, or anytime you need a bold, satisfying bite.
Instructions:
- In a large mixing bowl, stir together the cream cheese, mayonnaise, granulated onion, grated garlic, celery seed, and 1/2 teaspoon salt using a wooden spoon.
- Fold in the chopped jalapeos, scallions, roasted red peppers, grated Cheddar, and Sriracha until fully combined.
- Taste and adjust seasoning as needed.
- Serve this irresistible, spicy spread immediately with Ritz crackers, corn chips, or fresh cruditswatch it disappear!
Cook's Note: Grate the garlic like you would lemon zest using a fine rasp. For the Cheddar, use the side of a box grater, similar to how you'd grate carrots, to get the best texture.
