Ingredients

  • 2 medium sweet potatoes, peeled
  • 2 tablespoons quality olive oil
  • 1 tablespoon light brown sugar
  • 1 teaspoon kosher salt, plus extra for sprinkling
  • 1 teaspoon freshly ground black pepper

Directions

  1. Heat the oven to 450 degrees Fahrenheit.
  2. Cut each sweet potato in half lengthwise, then slice each half into three long sticks. Arrange the sticks on a baking sheet and toss with the olive oil to coat. Spread them in a single layer.
  3. Combine the brown sugar, salt, and pepper and sprinkle evenly over the potatoes. Bake for 15 minutes, then turn the fries with a spatula and bake 510 more minutes until lightly browned.
  4. Sprinkle with additional salt if desired and serve warm.
