Ingredients
- 2 medium sweet potatoes, peeled
- 2 tablespoons quality olive oil
- 1 tablespoon light brown sugar
- 1 teaspoon kosher salt, plus extra for sprinkling
- 1 teaspoon freshly ground black pepper

Directions
- Heat the oven to 450 degrees Fahrenheit.
- Cut each sweet potato in half lengthwise, then slice each half into three long sticks. Arrange the sticks on a baking sheet and toss with the olive oil to coat. Spread them in a single layer.
- Combine the brown sugar, salt, and pepper and sprinkle evenly over the potatoes. Bake for 15 minutes, then turn the fries with a spatula and bake 510 more minutes until lightly browned.
- Sprinkle with additional salt if desired and serve warm.
