Ingredients:
- 1 roll (16.5 oz) Pillsbury refrigerated gingerbread cookie dough
- 1 cup white vanilla baking chips
- 2 tablespoons shortening

Instructions
- Preheat the oven to 350F. Remove half of the cookie dough from its packaging; store the remaining dough in the refrigerator until needed.
- Sprinkle approximately 1/4 cup of flour onto your work surface and lightly coat the sides of half the dough with flour. Using a rolling pin, roll the dough out to a thickness of 1/4 inch, adding more flour as necessary to prevent sticking.
- Cut out star shapes with a 3-inch star cookie cutter dusted with flour. Gently brush off any excess flour from the stars and arrange them 2 inches apart on an ungreased baking sheet. Repeat with the other half of the dough.
- Bake the cookies for 7 to 9 minutes, or until they turn a light golden brown. Let them cool on the baking sheet for 1 minute before transferring them to cooling racks. Allow them to cool completely, about 15 minutes.
- In a 1-quart saucepan, melt the white vanilla baking chips together with 2 tablespoons of shortening over low heat, stirring occasionally for about 4 minutes until the mixture is smooth. Remove from heat. Dip half of each cookie into the vanilla coating, letting the excess drip off. Arrange the dipped cookies on a cookie sheet lined with waxed paper and refrigerate until the coating firms, about 30 minutes.
Microwave Alternative: Place the chips and shortening in a small microwave-safe bowl. Microwave uncovered on High for 30 to 60 seconds, stirring every 15 seconds until fully melted. If the coating firms up during dipping, simply heat for another 10 to 15 seconds to soften it again.
