  • 1 bottle bourbon
  • 1 ounce loose leaf chamomile tea
  • 5 pounds slab bacon, cut into cubes
  • 1 pound light brown sugar
  • 3 tablespoons ground coffee
  • 3 tablespoons cocoa powder
  • 3 tablespoons sea salt
  • 1 tablespoon espelette pepper

  1. Preheat your oven to 350F (175C) and get ready for flavor magic.
  2. In a large saucepan over medium-high heat, bring the bourbon, 2 cups of water, and loose chamomile tea to a gentle simmer. Add the cubed bacon and simmer until fully cooked and the liquid reduces beautifully, infusing every bite with smoky depth.
  3. In a shallow dish, whisk together the light brown sugar, ground coffee, cocoa powder, sea salt, and espelette pepper for a decadent spice blend. Using a slotted spoon, transfer the bacon from the bourbon mixture and toss to coat evenly. Reserve the bourbon liquidit's your secret glaze!
