Baked Seabass with Garlic Butter and Herb Breadcrumb Topping

Ingredients
- 5 ounces sourdough or other bread
- 1 tablespoon butter, plus 1/2 stick (4 tablespoons) unsalted butter
- 4 sea bass fillets (about 6 ounces each)
- Salt and freshly cracked black pepper
- 1 lemon, zested and juiced
- A few thyme sprigs, leaves only
- 3 garlic cloves, smashed
- 1 cup fresh parsley leaves
Instructions
- Preheat the oven to 350F.
- Pulse the bread in a food processor into rustic, chunky breadcrumbs.
- Butter a baking dish with 1 tablespoon butter. Arrange the fillets in the dish and season with salt, pepper, lemon zest, lemon juice, and thyme leaves.
- In a large skillet, melt the remaining 1/2 stick (4 tablespoons) butter with the smashed garlic. When it bubbles, remove from heat and let the garlic steep in the warm butter.
- Remove and discard the garlic pieces. Add the breadcrumbs to the butter and toss until the crumbs absorb the butter. Stir in the parsley and adjust seasoning with salt and pepper.
- Spread the breadcrumb mixture over each fillet and bake about 1215 minutes, until the topping is golden and the fish is cooked through.
