Ingredients- 2 Golden Delicious apples
- 2 or 3 tablespoons butter
- 4 tablespoons light brown sugar
- Ground cinnamon, to taste
- Creamy Custard Sauce (see recipe)
- 1/2 pint light vanilla ice cream, melted (recommended: Ben & Jerry's)
- 2 egg yolks
- Preheat your oven to 350F.
- Rinse and dry the apples. Slice in half and core, but leave the stems in place. Arrange apple halves in a baking dish. Spread the butter evenly among the hollowed cores. Each apple half should be sprinkled with about one tablespoon of brown sugar and dusted with cinnamon.
- Bake until the apples are soft and the centers bubbly, around 30 minutes. Serve warm, topped with Creamy Custard Sauce.
- Warm the melted vanilla ice cream in a small saucepan on low heat until hot. In a separate bowl, whisk the egg yolks until smooth and creamy. Into the yolks, gradually pour about 1-2 tablespoons of the warm melted ice cream, whisking constantly until mixed.
- While whisking non-stop, slowly incorporate the rest of the hot ice cream into the yolk mixture. Once combined, return everything to the saucepan over low heat and stir gently until the sauce thickens.
