Sesame Snow Peas

- 2 teaspoons sesame oil
- 1 pound snow peas, cleaned
- 1 tablespoon black and white sesame seeds
- 1 lemon, juiced and zested
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley leaves
Instructions
- Fire up your food processor and blend all ingredients except the pork tenderloins until smooth and irresistible. Slip the tenderloins into a resealable plastic bag, pour in the marinade, seal tight, and chill for 1 hour to infuse those bold flavors.
- Preheat oven to 400F (200C).
- Heat a large nonstick, oven-safe skillet over high heat. Sear the tenderloins on all sides for about 4 minutes until golden. Pop the skillet in the oven and roast 18-20 minutes, until internal temp hits 145F (63C). Rest 5 minutes for juicy perfection.
- Grill option: Fire up medium-high heat and grill, turning often, for 25 minutes to 145F (63C). Rest before slicing.

- Heat sesame oil in a large saut pan over high heat. Toss in snow peas and stir-fry 3 minutes until crisp-tender.
- Stir in black and white sesame seeds for that toasty crunch.
