  • 1/4 cup pineapple juice
  • 1/4 cup loosely packed fresh cilantro leaves
  • 2 tablespoons coarsely chopped fresh ginger
  • 2 tablespoons honey
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons Emeril's Asian Essence
  • 2 tablespoons chopped garlic
  • 1 tablespoon sesame oil
  • 1 tablespoon crushed red pepper
  • 2 pork tenderloins (approximately 2 pounds total)

Sesame Snow Peas

  • 2 teaspoons sesame oil
  • 1 pound snow peas, cleaned
  • 1 tablespoon black and white sesame seeds
  • 1 lemon, juiced and zested
  • Salt and pepper to taste

Instructions

  1. Fire up your food processor and blend all ingredients except the pork tenderloins until smooth and irresistible. Slip the tenderloins into a resealable plastic bag, pour in the marinade, seal tight, and chill for 1 hour to infuse those bold flavors.
  2. Preheat oven to 400F (200C).
  3. Heat a large nonstick, oven-safe skillet over high heat. Sear the tenderloins on all sides for about 4 minutes until golden. Pop the skillet in the oven and roast 18-20 minutes, until internal temp hits 145F (63C). Rest 5 minutes for juicy perfection.
  4. Grill option: Fire up medium-high heat and grill, turning often, for 25 minutes to 145F (63C). Rest before slicing.
