Ingredients:

  • 3/4 pound pork loin
  • 1/4 cup sliced onions
  • 1/8 cup sliced celery
  • 2 pints sauerkraut
  • 3/4 pound spare ribs
  • 2 cups veal stock
  • 3/4 pound sausage
  • 1 teaspoon tomato paste
  • 12 juniper berries
  • 1/2 teaspoon caraway seeds
  • 1 apple, peeled and sliced
  • 2 potatoes, peeled and diced small
  • Salt and freshly ground pepper to taste
  • 2 teaspoons brown sugar

Instructions:

  1. Season the pork loin and brown it thoroughly in a heavy skillet. Set aside after browning to lock in those rich flavors.
  2. In the same skillet, add onions, celery, sauerkraut, spare ribs, and veal stock. Cover and simmer for 45 minutes, building a savory base without the sausage or pork loin yet.
  3. Stir in the sausage, browned pork loin, and remaining ingredients: tomato paste, juniper berries, caraway seeds, apple slices, diced potatoes, brown sugar, salt, and pepper.
  4. Simmer everything together for another 45 minutes, until the pork is tender and fully cookedyour kitchen will fill with irresistible aromas!
