Ingredients
- 2 tablespoons olive oil
- 3 pounds ground sirloin or chuck
- 1 teaspoon baking powder
- 2 medium white onions, diced
- 2 tablespoons dried ancho chile powder
- 1 tablespoon ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon dried Mexican oregano
- 2 cloves garlic, minced
- 1 3/4 cups beef stock
- 1 tablespoon demi-glace (concentrated beef stock)
- One 28-ounce can diced tomatoes
- One 15-ounce can red kidney beans, rinsed and drained
- Kosher salt and freshly ground black pepper
- Sliced scallions, chopped fresh cilantro, sour cream, pickled jalapeos and shredded aged yellow Cheddar, for serving

Instructions
- Warm a large pot over medium heat and pour in the oil. Add the ground beef and sprinkle with baking powder. Cook the beef, stirring and breaking it into smaller pieces, until it is no longer pink, about 5 to 10 minutes. Use a slotted spoon to transfer the beef to a bowl.
- Add the diced onions to the pot and lower the heat to low. Cook, stirring occasionally, until the onions are soft, about 8 to 10 minutes. Stir in the ancho chile powder, cumin, smoked paprika, cayenne pepper, and oregano, and cook for an additional 2 minutes to release their bold aromas. Add the minced garlic and saut for another 30 seconds. Pour in the beef stock, demi-glace, diced tomatoes, and kidney beans. Return the cooked beef and any juices to the pot. Simmer, partially covered, stirring often, for 2 hours. Season with salt and pepper to taste. Your kitchen will fill with irresistible, smoky flavors!
