Instructions

  1. Warm a large pot over medium heat and pour in the oil. Add the ground beef and sprinkle with baking powder. Cook the beef, stirring and breaking it into smaller pieces, until it is no longer pink, about 5 to 10 minutes. Use a slotted spoon to transfer the beef to a bowl.
  2. Add the diced onions to the pot and lower the heat to low. Cook, stirring occasionally, until the onions are soft, about 8 to 10 minutes. Stir in the ancho chile powder, cumin, smoked paprika, cayenne pepper, and oregano, and cook for an additional 2 minutes to release their bold aromas. Add the minced garlic and saut for another 30 seconds. Pour in the beef stock, demi-glace, diced tomatoes, and kidney beans. Return the cooked beef and any juices to the pot. Simmer, partially covered, stirring often, for 2 hours. Season with salt and pepper to taste. Your kitchen will fill with irresistible, smoky flavors!
  3. Top with sliced scallions, chopped cilantro, sour cream, pickled jalapeos, and shredded aged yellow Cheddar before serving. Dig in and savor every spicy, comforting bite of this crowd-pleasing chili!

Spicy Pimento Cheese Spread Recipe

A classic Southern appetizer served with butter crackers and pickles on the side, pimiento cheese is also delightful to have on hand as leftovers, as it livens up any sandwich. (PS: note that I spelled pimiento as is standard at FN but it does not agree with the spelling in the recipe title.)
