Ingredients

  • 3/4 cup sliced almonds
  • 3/4 cup sugar
  • 3/4 cup unsalted butter, softened and sliced (1 1/2 sticks)
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon almond extract
  • 1 2/3 cups all-purpose flour
  • 1/2 teaspoon fine salt
  • 1 cup confectioners' sugar

Instructions

  1. Pulse the almonds and sugar in a food processor until finely ground. Add the butter and blend until smooth, approximately 1 minute. Scrape the bowl sides if necessary. Pulse in the vanilla and almond extracts, then add the flour and salt, pulsing until a soft dough forms. Shape the dough into a log approximately 15 inches long and 1 1/2 inches in diameter on wax paper, wrap, and refrigerate for 30 minutes.
  2. Preheat the oven to 325F and line two baking sheets with parchment paper.
  3. Cut the chilled dough into 1/2-inch segments and roll each piece into a ball. Arrange the cookies on the baking sheets with space between them and bake for 15 to 20 minutes until golden, rotating pans once during baking. Pour confectioners' sugar into a shallow dish. After the cookies cool slightly on a rack, gently coat them in the sugar until fully covered. Return to the rack, cool completely, and toss in confectioners' sugar once more.
