Ingredients
- 3/4 cup sliced almonds
- 3/4 cup sugar
- 3/4 cup unsalted butter, softened and sliced (1 1/2 sticks)
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon almond extract
- 1 2/3 cups all-purpose flour
- 1/2 teaspoon fine salt
- 1 cup confectioners' sugar
Instructions
- Pulse the almonds and sugar in a food processor until finely ground. Add the butter and blend until smooth, approximately 1 minute. Scrape the bowl sides if necessary. Pulse in the vanilla and almond extracts, then add the flour and salt, pulsing until a soft dough forms. Shape the dough into a log approximately 15 inches long and 1 1/2 inches in diameter on wax paper, wrap, and refrigerate for 30 minutes.
- Preheat the oven to 325F and line two baking sheets with parchment paper.
- Cut the chilled dough into 1/2-inch segments and roll each piece into a ball. Arrange the cookies on the baking sheets with space between them and bake for 15 to 20 minutes until golden, rotating pans once during baking. Pour confectioners' sugar into a shallow dish. After the cookies cool slightly on a rack, gently coat them in the sugar until fully covered. Return to the rack, cool completely, and toss in confectioners' sugar once more.
