Ingredients
- 2 peaches, pitted and chopped
- 2 cups sugar
- Vanilla ice cream, for serving
- 12 whole basil leaves, cut into a chiffonade

Directions
- Place the chopped peaches in a bowl or mason jar and set aside.
- In a saucepan, mix together the sugar and 2 cups of water. Stir until combined. Set the heat to medium-high and bring to a boil, cooking until the syrup thickens slightly but hasn't started to change color, about 3 to 5 minutes. Remove from the heat and pour the syrup over the chopped peaches. Let sit at room temperature for 1 hour (or chill in the refrigerator).
- To serve, spoon the peach syrup over the vanilla ice cream and sprinkle with the basil.
