Cook Mode (Keep screen awake) NEW
Cook Mode: You can now enable Cook Mode to prevent your screen from turning off.
- Place 2 cups each of cubed Yukon Gold potatoes and sweet potatoes into a pot of cold, salted water; bring to a boil and cook until tender, about 5 to 8 minutes. Drain thoroughly and pat dry.
- Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add the potatoes and saut, turning occasionally, until golden brown, about 8 minutes.
- Stir in 1 teaspoon freshly grated ginger, 1/2 teaspoon grated garlic, and 1 teaspoon curry powder; season with salt and pepper to taste and cook for another minute.
- Garnish with chopped cilantro before serving.
