Ingredients
- Nonstick cooking spray
- 16 ounces frozen potato tots (such as Tater Tots), thawed (about 4 cups; see Cook's Note)
- 2 tablespoons extra-virgin olive oil
- 8 ounces bulk breakfast sausage
- 1 to 2 tablespoons harissa paste
- 1 tablespoon all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- Kosher salt and freshly ground black pepper
- Crumbled feta cheese, for garnish
- Chopped parsley, for garnish

Instructions
- Preheat your oven to 200F. Warm the waffle iron on high and spray it with nonstick spray. Spread half of the thawed potato tots evenly on the iron. Close the waffle iron and cook on medium-high heat. After a few minutes, fill in any gaps with additional tots. Close the iron again and continue until the waffle is golden and crispy, about 8 minutes total. Move the waffle to a baking sheet and keep warm in the oven. Repeat with the remaining tots.
- In the meantime, heat olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it apart with a wooden spoon until fully browned, about 5 minutes. Stir in harissa and cook for about 1 minute until the sausage is evenly coated. Sprinkle in the flour and cook, stirring constantly, for 2 minutes. Slowly whisk in the chicken broth and simmer until the gravy thickens, about 3 to 5 minutes. If the sauce becomes too thick, add more broth or water. Season with salt and pepper to taste.
- Optionally halve the waffles and serve them on plates. Ladle the sausage gravy over the waffles. Top with crumbled feta and sprinkle parsley over everything. Serve immediately.
This recipe makes a half waffle per serving. Double the ingredients if you'd prefer one whole waffle per person.
