Burgers:

- 1 onion, diced into 1/4-inch pieces

- 2 garlic cloves, crushed and finely chopped
- 1 1/2 pounds ground turkey

- 1-inch piece fresh ginger, peeled and grated
- One 8-ounce can water chestnuts, drained and roughly chopped
- 1/2 bunch fresh cilantro leaves, finely chopped

- Heat olive oil in a large saut pan and add diced onions with a pinch of salt. Cook over medium-high heat for 78 minutes until softened and fragrant, then stir in garlic and cook for another minute. Let this aromatic base cool.
- In a large bowl, combine the ground turkey with soy sauce, sambal oelek, ginger, water chestnuts, cilantro, and the cooled onion-garlic mixture. Add to cup of water to keep the burgers tender and juicy. Mix gently but thoroughly with your hands.
- Form a small test patty and cook it to taste. Season to your preferenceadd more soy sauce or salt if needed for depth.
- Divide the mixture into 4 equal patties, keeping them uniform for even cooking.
- Return the saut pan to medium-high heat with fresh olive oil. Cook burgers in batches (don't crowd the pan), searing each side for 56 minutes until beautifully browned. Top with cheese in the final minute if desired.
- Toast your buns until golden, spread sambal mayo on both sides, and layer with your cooked burger, tomato, red onion, and lettuce. Press gently and savor every bite!
