Transform your mashed potatoes into a creamy, herb-infused delight by blending in rich yogurt and a vibrant mix of fresh chives, dill, and parsleyperfect for elevating any meal with irresistible flavor!
Ingredients:
- 2 pounds Idaho or Yukon Gold potatoes
- Kosher salt and freshly ground black pepper, to taste
- 1 cup plain yogurt
- 1 stick (8 tablespoons) unsalted butter
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
Instructions:
- Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a gentle simmer, uncovered, and cook until tender when pierced with a fork, about 45 minutes. Drain thoroughly.
- Once cool enough to handle, peel the potatoes and return them to the pot. For ultra-smooth results, pass through a ricer or food mill.
- Mash with yogurt and butter using a fork or potato masher until creamy and well combined.
- Stir in most of the chives, dill, and parsley, plus 2 teaspoons salt and a few grinds of black pepper. Transfer to a serving bowl and garnish with remaining herbs for a fresh, colorful finish.
