- 3 3/4 pounds sashimi-grade tuna steak, very fresh
- 1 1/4 cups extra virgin olive oil
- Zest from 5 limes, grated
- 1 cup freshly pressed lime juice
- 2 1/2 teaspoons wasabi powder
- 2 1/2 tablespoons soy sauce
- 2 tablespoons hot red pepper sauce
- 2 1/2 tablespoons coarse kosher salt
- 1 1/2 tablespoons freshly ground black pepper
- 1 1/4 cups scallions, white and green parts, finely chopped (about 12 scallions)
- 3 1/4 tablespoons diced fresh jalapeno, seeds discarded
- 5 ripe Hass avocados
- 1 1/2 tablespoons toasted sesame seeds (optional)
